24 Grados was born in Colombia, in a geography where altitude, humidity, and harvest rhythm determine the character of each bean. We don't start with a promise, but with a specific origin: coffee regions with particular soil, climate, and tradition. Every coffee we work with retains that information in its cup profile.
Our work begins with selection. We choose microlots and farms whose processes—washed, natural, or experimental—have been meticulously executed. Traceability is not a slogan; it's a working method: we know which rural district each lot comes from, at what altitude it was grown, and how it was dried. This precision allows us to respect what is already in the bean, rather than imposing an foreign character during roasting.
We work directly with Colombian producers who understand cultivation as a long-term practice. Fair pricing and commercial stability are not ethical add-ons, but necessary conditions to sustain quality over time. A well-grown coffee is the result of careful agronomic decisions and a balanced relationship with the land.
In the roaster, the goal is clear: to reveal, not to over-transform. We adjust curves to highlight the unique attributes of each origin—acidity, sweetness, structure—and maintain consistency between batches. Controlling variables is not about standardizing flavor, but making it legible.
We believe that good coffee should be explainable. From planting to packaging, each stage responds to verifiable technical criteria. History does not replace quality; it accompanies it.
